It is predicted to hit 90 today in DC. We seemed to have skipped spring and gone directly to summer. The one good thing about the heat is that I am suddenly craving all the beachy reads. First up on my list is Kevin Kwan's Crazy Rich Asians. This novel is about a women who is unknowningly dating the heir to a massive fortune in Singapore. They head back to Asia to visit his family for a wedding and, well, you can imagine how her attempt to fit in with jet-set life not her own causes an addictive story.
A beachy read needs a food that is as light and refreshing as it is indulgent. Atlantic Beach Pie is the perfect fit. I have made this pie twice now and it never ceases to please. It's incredibly easy to make and it manages to feel incredibly indulgent without feeling rich. The citrus keeps things light and fresh. I cheat and use light cool whip as the topping and it works perfectly. This salty, sweet, crunchy, and creamy pie is a perfect match for Crazy Rich Asians. It's a luxurious treat that also has complexity of taste. It's a good thing Kevin Kwan's book is the first in the series, because you're going to want to keep making this pie after you've tried it.
